I forgot how much I love this soup. Recently we’ve had a lot of rainy days here and I’ve been craving something hot to drink so I made a quick trip to the organic food store and a couple hours later I was drinking a delicious hot and healing soup broth. One thing I’ve struggled with over the years with the candida diet is finding soup broth or stock that doesn’t contain yeast or other less desirable ingredients. Making chicken or beef stock isn’t a problem now since it’s proven to be very healing to my leaky gut, I have made myself be okay with the process, and am now making it regularly. When it comes to vegetable stock I was still having issues making vegetable based soups until I tried Rebecca Katz’s Magic Mineral Broth. Not only is this broth amazing on it’s own but I knew I had found my veggie soup stock.
I think what I love most about this broth is how quick and easy it comes together. There’s no peeling or dicing of veggies, only washing and some quick and messy chopping and your veggies are ready to go. Add the water, a bit of seasoning, and a few hours later you will be enjoying a hearty soup broth chock full of nutrients. Hence the name.
I seriously encourage you to make this soup. Whether you are sick, healthy or somewhere in between, this soup is delicious, nutritious and perfect on a cold and rainy spring day:)
